Auntie Katri

huhtikuuta 27, 2019

On Easter Monday I wrote that I’ll be an auntie soon. And just so it happens, now I am an auntie! I’m so so happy for this new role of mine. Now I’m a girlfriend, a daughter, a sister, a employee, a friend, a co-worker, a godmother and an AUNTIE! I’m so so happy that I’m actually afraid of breaking that little person with hugging him too tight.

I’m such a baby and kids person that I’m still over the moon for having a goddaughter, who is now about three years old. She is such a cool and great person, definitely one of the funniest people I know. I feel very priviledged to be able to follow her growth in this role. So based on this you can imagine the reaction my nephew’s existence creates in me… But I’ll try to act all cool not to be totally banned from Espoo.

In reality I feel like this: ”!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!”

Another thing that has made me very happy has been all of those lovely messages I’ve gotten from you on Instagram and blog comments. Blogging has been such a big part of me since 2009 that I dreamed of starting this new blog for a long time. Still I was a bit nervous to open this. My life has changed so much in a year and somehow I was a bit scared to tell you guys about it, even though I’m completely fine with it and all of my close ones know about it. I was also scared that in my moody and depressed moments I would write and publish something I would later regret.

Some alone time from the blog did me good and I love starting my new life now. Ahead of us there’s a new summer, lovely people and a tiny person to sniff. What else could I even ask for.

Kiitos ihanista viesteistä kaikille, nyt alan siivoilemaan ennen kuin Mikkelissä asuva isäni ilmestyy ovelle. Myös tuore pappa on aivan haltioitunut!

All of the feedback from you guys has been so lovely and that has made me very excited about this blog, you can’t even imagine! I’m still going to do this in a relaxed way, without staring at the followers count too much. I want to focus on interaction and being creative.

The name of the blog has been in my mind since last summer. Back then I was planning on starting a baking blog. I’m still very excited to learn to be a better baker and I thought that the main focus in the blog will be on baking and lifestyle. I’m not a very skilled baker so this should be fun :D

One more time, thank you for all the lovely messages. I’m gonna start cleaning now before my dad comes over. Also the new granddad is very much in love with the new baby!

Mansikkainen rahkakakku

huhtikuuta 24, 2019

Alla olevan reseptin olen muuntanut muistaakseni Valion alkuperäisen ohjeen pohjalta.

This lighter version of a cheese cake has been my go to cake for years, because it’s so simple to make if you just know how to use gelatine. It’s a good choice for a treat to bake at the summer cottage too, as long as you have an access to boiled clean water and a fridge – I’ve tested! In the midsummer of 2018 I did the one in the photo at the cottage and right when I was making it, there was an electricity cut. Thank God I had just finished boiling the water for the gelatine! :D

The beauty of a quark cake is that there are endless possibilities for the filling: for fruity result, use fruit quark, for chocolatey version use chocolate or for example mint chocolate quark. The original version of this recipe is from Valio website and I’ve edited it a bit since.

Mansikkainen rahkakakku

• 75 g voita
• 175 g mintun makuisia Domino- tai Oreo-keksejä
• n. 500-600 g mansikkarahkaa (3 pikkupurkkia)
• 2 dl kuohukermaa
• 5 liivatelehteä
• 0,5 litraa tuoreita mansikoita
• 1 rkl sokeria
• 2 tl vaniljasokeria
• vettä

1. Murskaa keksit monitoimikoneella tai pakastepussissa nuijimalla. Mitä pienempää murua saat aikaiseksi, sen parempi. Sulata voi ja lisää se keksimurskan joukkoon. Taputtele seos irtopohjavuokaan.

2. Laita liivatelehdet pehmenemään runsaaseen kylmään veteen noin viideksi minuutiksi.

3. Vaahdota kerma. Yhdistä keskenään rahka ja sokerit, lisää joukkoon kourallinen pieneksi lohkottuja mansikoita.

4. Kiehauta pieni määrä vettä. Purista liivatelehdistä kaikki kylmä vesi pois ja sekoita ne vauhdilla pieneen tilkkaan (1-2 rkl) kiehuvaa vettä. Lehdet sulavat nesteeseen, eikä seoksessa saa näkyä pieniäkään kasaumia.

5. Lisää valmis liivateneste rahkan joukkoon ohuena nauhana, koko ajan sekoittaen. Lisää lopuksi kermavaahto ja sekoita.

6. Kaada täyte vuokaan keksipohjan päälle, peitä kelmulla tai tiiviillä lautasella. Anna hyytyä jääkaapissa vähintään neljä tuntia.

7. Koristele tuoreilla mansikoilla ja vaikka mintun lehdillä ja nauti!

Strawberry quark cake (aka a bit lighter cheese cake)

• 75 grams of butter
• 175 grams of mint flavoured Oreos
• 500-600 grams of strawberry quark
• 2 desilitres of whipped cream
• 5 gelatine leaves
• 0,5 litres of fresh strawberries
• 1 table spoon of sugar
• 2 tea spoons of vanilla sugar
• water

1. Crush the cookies in a plastic bag or with a machine. The smaller crumbs the better. Melt the butter and add it to the crushed crumbs. Pat it into a cake tray that has a removable bottom.

2. Soak the gelatine leaves in some cold water for about 5 minutes. Cut strawberries into smaller pieces.

3. Whip the cream. Combine quark and the sugars in a separate bowls, add the cut strawberries into the mix.

4. Boil a small amount of water. Squeeze the cold water off from the gelatine leaves and quickly mix them into a small amount (1-2 table spoons) of boiling hot water. The leaves will melt into the water. Make sure to check that you’re not left with any gelatine chuncks and if that’s the case, add a tiny bit of boiling water, just enough to melt the pieces.

5. Add the gelatine liquid to the quark bowl while whipping the mix at the same time. Finally add the whipped cream and mix.

6. Pour the mix on top of the cookie bottom on the cake tray and cover it with plastic wrap or a plate. Put in the fridge for overnight or minimum of 4 hours.

7. Decorate with fresh strawberries and enjoy!

1. Juokseminen

1. Running

I never thought I would say this out loud but hi, I’m Katri and I’ve gotten into running. Although, I have a shady memory of experiencing the same feeling on the second year of high school, when I started running quite often with my mp3 player in my jacket pocket. But since then I haven’t liked the hobby as an adult. I love walks with friends because then I can spend time with them by chatting and moving my arse, but with the fitness perks in my mind – nope. Now the fitness is in the air, too, thanks to my boyfriend.

Joe does running and has run multiple half marathons and one full marathon. He has also done smaller running events (I’m losing count and I’m too embarrassed to ask yet again) and now I’ve gotten the same fever. The best thing is that we take our jogs quite loosely: we first only agree to go for a walk in our running gear and if it develops into running, great. Sometimes we run, sometimes we stop to take scenery pictures at the beach. How great is that.

Fueled by this new excitement, we bought tickets to the Colour Obstacle Rush event. The run is only a pityfyl 5 km, but it’s a lot for me! And the main things in the event are the obstacles and colours, right… I can’t wait! Is anyone else going to this event?

2. Joen maahanmuuttoasiat

2. Joe’s immigration process

Things are progressing… Step by step all the paper work has almost been finished. In February I almost lost my faith jumping in between the immigration office, tax office, registration office and the bank. Just to mention a few. I would have never believed that among all the things we had to take care of, Kela would be the easiest and a bank would be the most difficult to deal with. I would have assumed it’s the other way around :D

Anyway, it’s a lovely feeling when things progress and are dealt with. Joe even managed to get his dream job after a week of living in Finland. This verifies my way of thinking that everything does happen for a reason! That thought has carried me through a lot by now. Currently we are dealing with the final paper stuff – the next ones are waiting for us only when the Brexit happens.

3. Lidl and grocery shopping

My previous boss joked that I’m such a middle aged woman on paper, even though I’m only 27 years old: I’m divorced and I’m changing into a public sector office job. I’ve got no complaints since I’ve always been an old soul :D Latest new adult feature in me is how excited I am about grocery shopping! Previously I’ve always done grocery shopping when I’ve been hungry and tired, right before the dinner time. In a rush I’ve also used the nearest small market which is very expensive. I used to hate cooking. Everything that had anything to do with eating at home made me anxious. I was also working in retail and the hours were not ideal for food planning.

Something has now clicked in my head and I don’t know if it’s the mental middle agedness or the day time job, but I’ve really started loving planning cooking and making a week’s grocery on one visit to the store. On my new work route there’s also a Lidl and I’m still amazed how much more affordable the items there are. Even though a lot of the brands are the same as in other stores. I made a long list of dinner options to my phone notes to ease the making of food shopping lists. Are you interested in easy and delicious weekday meal recipes by the way? Almost all of the ones on my list are vegetarian or mostly vegetarian.

4. Korea-kosmetiikka

4. Korean cosmetics

I’ve now been using Korean skin care products for half a year and I’m really into them – I don’t see a return to ”normal ones” happening anytime soon. I don’t have any experience on Korean make up yet, but at least the skin care stuff has really been great for my skin, much better than any Western equilevants. My skin has calmed down and the price-quality-comparison of the products is excellent. I’m going to do a post about my Korean favourites that I’ve purchased again after running out so they’re keepers for sure.

Kertokaa, mitä ihanaa teidän elämässä on tällä hetkellä?

5. Being an aunt

Any day now I’ll become an auntie for a small nephew. He is our parents’ first grandchild and there’s a lot of excitement in the air, lots of excited people are waiting for the little man. He will probably be suffocated to the amount of love he will be getting ♥♥♥ I already informed my brother that this private day care center is open 24/7.

Let me know, what lovely things do you have in life right now?

Alku

huhtikuuta 20, 2019

Here we go again, starting a blog with a clean and empty slate. My life has turned upside down since the last time I was talking with you guys. Some of my old followers may have guessed this through my recent Instagram pictures, and some of you have even sent me direct messages to ask me about it.

Those messages mean a lot to me, so thank you so much for sending them! I love that you're still out there and traveling on this road with me, even though I ended up closing the last blog so suddenly. That's just what I needed at the time, I was so busy and just trying to handle all the changes that were happening in my life.

Tällä kertaa lautasella on tietojenkäsittelyä, joskin onneksi monimuotona.

A year ago, I was studying cultural productions while working as a sales assistant in a clothing store, and I was married to my first love. At that point, we were living our 11th year together. I'm still studying, but studying a different subject in a different university in Helsinki. I graduated from my previous university last June, but somehow (don't ask me) ended up applying back to school last fall. I must have been so exhausted and sleep deprived when I made that decision, haha! Anyway, somehow, I got accepted to study Information and Communication Technology. The nerd in me is half satisfied, half terrified. Thankfully, my lectures and exams take place in the evenings. I'm still considering if I have what it takes to do another degree so soon after the last graduation, but at least while I'm thinking about what to do, I'm learning something new every day.

I still work, of course, but I'm in a much different job now. From a busy life of standing on my feet all day in a retail job, I changed to perhaps an even busier, or at least different kind of busy (it's called stress, ya'll) office job. I'm currently testing my butt muscles and sitting skills by working as a hospital secretary. I'm soooo incredibly happy for the challenge, and I love all the free evenings and weekends, even though I do miss my old and dear co-workers from the store. I also miss some things from working in retail and being on my feet all day. But I guess everything has its perks.

On the subject of change, there’s been a significant change in my life. The kind of change that pulls the rug from under your feet and leaves you spinning in confusion. I'm not married anymore. But at this point in dealing with massive change and grief, I can already see that everything in life has a meaning and a reason. Time heals, and things always work out, even when you feel desperate, lost, and sad. The divorce hurt me with a sting I've never experienced before, and I guess it will hurt for a long time. But through all this, I can officially call myself a strong woman, as I was dealt a bad hand, but carried on playing the game. That's all any of us can do!

You can find strength in hard times. These days I feel like a branch that's been bent by the strongest winds but did not break. Last year really did feel like a tornado, but now I'm growing some new beautiful summer leaves on that somewhat damaged but unbroken branch.

In dark times, I thought that I would never develop a crush on anyone ever again, and especially never thought I'd fall in love and share my life with anyone else than my family and friends. But, sometimes fate pushes you to open your heart again, and I did that when one of my oldest and dearest friends became close to me in a completely different way. Some of you have already seen him on my Instagram, and I will definitely talk more openly about the experience when I feel ready and comfortable to do so. I'm also going to write a lot about our lives together, especially about our cultural differences. Different heart language makes the whole home life a new experience, in a good and a bad way :D

Sooo… a lot has happened in those ten months when I've not been blogging. So there's a lot of new and old things to tell you guys! Are you still up for my random stories?
